I opened the fermented turnip jar last night.  What a pleasant surprise.  The taste of the turnips was very interesting (and pleasant!)  I will make this recipe up again, as soon as I finish this jar-full (I think I might add some things, perhaps dill, or garlic — or both- -I actually have an idea of doing 2 or 3 different combinations that would pique my personal taste buds. At the same time, I will make a plain version.)

Personally, I don’t think that this is a “side dish” (I do like sauerkraut as a side dish).  I like the taste, but, as a side dish, I would do a “dab”.  I do think it would be a good addition into any vegetable dish.

 As I mentioned in my last post, I was in a serious time-squeeze this afternoon.  I was working with a private student until 4pm – fortunately, she didn’t have any extra questions right at the end.  I flew out of the building by 4:05, made it to the subway station at @4:10, and, fortunately, a train pulled in right after I had reached my standing spot.  Made it to the community center where we pick up by 4:45.  (Play the Lone Ranger Suite).  Got my box, looked inside, went over to the trade box, saw the cabbage, grabbed it, went back to my box to get the chard, and back to the trade box to deposit it. Back to my box, baggy-ing everything as I took it out of the box (as I always do – makes it easier when I get home) Switched out the small cabbage for a larger one, and traded the potatoes for 5 cucumbers. 

All that took me about 15 minutes, and then I was on the run to my apartment, drop off the goods.  Made it to the apartment in 5, dropped the bags in the kitchen, changed clothes, and was back out on the way to the subway by 4:15.  YES!!!

Ate all of the cherry tomatoes on the train back to work.

That basil is pretty interesting looking.  The leaves are about as big as baby spinach leaves.

The cucumbers are quite large.  I’ve got about 10.  I can eat some of them, but I’m thinking of cutting up maybe half of them and trying out a raw sour pickle recipe.

With the cabbage, I’m going to make up a garlic dill jar, and then maybe a “kimchee flavor” jar (using kimchee spices with regular cabbage). 

The tomatoes?  Well, it’s summer… Mix some with cucumbers and onions for a salad, chop up some more and mix them into whatever piques my fancy (I’m still low on fancy and eating desire – got into those coral silk pants I bought 2 years ago, at last!)

I do want to get up to Fairway and pick up some cashews and almonds so I can make up some pates. 

 I’m thinking of making up a couple of batches of crackers, since I seem to be on a “fast food” diet tangent.  If I have crackers, I can put stuff on top of them and eat easy.


CSA WINTER SHARE INFO: What it is about, what might come

Here is how my winter CSA Share is supposed to work, according to the newsletter announcement:

20+lb share each delivery
$28 per delivery
5 deliveries

1 – Week of December 15th
2 – Week of January 5th
3 – Week of January 26th
4 – Week of February 16th
5 – Week of March 9th

Contents of share may include:
Butternut Squash, Sweet Potatoes, Potatoes (white & yellow varieties), Carrots, Red Beets, Celery Root, Rutabaga, Watermelon Radish. First share may include: Cabbage, Kale, Leeks (depending on the weather– no guarantees on this!)

I also signed up for a Mixed Apple Share ($21.25 total for 3 lbs per delivery) and 2 Cider Shares ($20 total for 1/2 gallon per delivery). It came out to a little over $200 for December through March organic fruit/vegetable/cider delivery. All I will have to get from the market will be greens and onions, as I see it. (I have a boatload of dehydrated tomatoes from the summer tomato share.) Oh, but I have already finished 1 of the cider bottles. Yum!

I got the job of “coordinator” (or whatever they are calling it) of the Winter Share Distribution, which is at a local community center. Yea!!! One of the interesting things about the job is that I have to count people and children, so that the center can get funding. Good! Probably more than half of the members come in bearing children. Some come with three or four. Good numbers!

cinnamon sticks

juice apples through a Champion juicer.
Blend juice and cinnamon in a blender.

Pour into cups. Place a cinnamon stick in each cup.

For a warm treat, warm cider in the dehydrator for 30 mins.

CSA POTLUCK TOMORROW, and I still don’t know what dish I will take

There is a CSA Potluck Dinner tomorrow, coupled with a silent auction. I have donated a malachite and silver necklace and a package of 20 corn crackers with a container of cashew cheez.

Now I need to think about what I will make for my contribution to the potluck. I am really really thinking of bringing a plate worth of the corn crackers and a pot of the cheez, to generate interest in buying the auction item.

Maybe I should make something else as well.

I have several sweet potatoes lying around, and some oranges, some dates, and some raw unsweetened dried coconut. That is the beginning of two possible recipes (I don’t think I want to make my two usual stand-by’s – raw marinated massaged collards, or raw beets/turnips in vinegar– although I do have some beets, some radishes, and some turnips in the refrigerator)

I’m thinking of one of two sweet potato recipes. I like them both because people are surprised when they realize that what they are eating is raw. I don’t know if I would make the whole pie, but I would offer the filling — with all those dates, it is very sweet. I am also thinking about a “stuffing” recipe made with sunflower seeds.

2 – 3 sweet potatoes (or yams)
1 C coconut, dried
2 apples
1/4 C ginger root
4 lemons juiced
2 oranges, juiced
1 C walnuts, chopped fine

• Chop sweet potatoes, apples, and ginger, and run through Champion juicer with ….blank plate. (Alternatively, grate sweet potatoes, apples, and ginger).
• Remove mixtureto a large bowl. Add shredded dried coconut, lemon and orange …juices, and chopped walnuts.
• Mix thoroughly

2 C almonds, soaked
1 C walnuts or pecans, soaked
1 C unsweetened shredded coconut
20 dates, soaked overnight
2 C cashews, soaked overnight, and drained
2 large sweet potatoes, peeled and diced.
3 t pumpkin pie spice
drizzle agave nectar

• Combine almonds, walnuts (or pecans, and coconut in food processor or Vitamix, …..and process until ground fine and dough-like
• Pat the dough into two pie plates

• Drain dates; reserve soak water.
• In food processor, puree dates, sweet potatoes, and pumpkin pie spice
• Remove mixture from food processor and set aside in a bowl.
• Set mixture aside in a bowl.
• Process cashews, agave nectar, vanilla, and date soak water as needed, until …..smooth and creamy.
• Combine cashew mixture and sweet potato mix puree
• Spread filling in pie shells
• Dehydrate for 6 hours, then refrigerate.

1 C sunflower seeds, soaked and drained
1 T flax seeds
1-1/2 C celery
1-1/2 C onion
1-1/4 C red bell pepper
1 T sage to taste (or use Bell’s Poultry Seasoning)
Salt and pepper to taste
Garlic to taste (optional)
1/2 C kalamata olives, chopped fine

• In a food processor, grind soaked sunflower seeds fine.
• Grind flax seeds fine in a coffee grinder.
• Remove ground seeds to a bowl.
• Place all remaining ingredients, save olives, in the food processor, and mince.
• Add olives and combine all ingredients thoroughly.
• Place in a pie tin, or rectangular tin of suitable size and dehydrate for six hours, or until dressing has reached your desired consistency.

No matter what, I need to go to the supermarket.

If I make ‘Amazing Sweet Potatoes” I need lemons.

If I make the sunflower seed dressing, I need the olives.

Oh!! If I make the pie filling, I don’t need anything, and it tastes really good…

What will I choose??? I need to decide in the next half hour. Oops! I’ve just gone for the easy one. Excuse me, I need to go soak the nuts.

What’s up with the “decorative gourds”???? I mean, I stretched no end to pay for the vegetables and fruit in the CSA season, and then they decide that we don’t need FOOD?  I do not need to pay for decorations. I NEED FOOD!!!!!!!  I will complain on Thursday, and, with any kind of luck, I will complain to someone who thinks that decorative gourds are just the ticket.

I mean…. ?????  Wasn’t this supposed to be about FOOD?????

7/17/08 CSA SHARE: What they say we will get

This is the week I will get 40 lbs of Roma tomatoes in addition to the regular share!!!!  (I’m excited but…. this is the week I am working from 8AM to 9PM!!!!!  Oh well, challenges are ways to see how good you are getting!  I am going to have to clear the kitchen tomorrow night so I can go to work directly when I get home on Thursday night.  I think I may make a lot of tomato juice this year, just to lighten the load!!!)

The farm newsletters says the share will be:

FRUIT SHARE – no idea what we will get – the Monday deliveries get peaches and raspberries – I hope we do, too.  I know what to do with peaches!!!

This week will most likely be a “plain vanilla” experience.  I get off at 3pm, and will probably get home around 3:45. I usually go to pick up my share around 6 pm, and can trade out things that I don’t want for things others have left.  This week, however, I will have to go by 4:30, so I can pick up and bag everything, and then come home and dump it in the kitchen, and get back on the road before 5:30, so as to be back at work by 6pm.  I will just have to take what is in the box, and give what I don’t like to the neighbors.  Such is life… just hope I get the peaches!


2 sm. peaches, pitted
1 t raw coconut oil (optional but highly recommended)
4 t raw honey or agave nectar
2 dashes cinnamon
1/4 lb. raw walnuts, soaked 4-6 hours
5 dates, pitted

1 – Combine peaches, coconut oil, 2 t honey (or agave nectar) and dash cinnamon, and process until smooth.  Remove to a separate bowl.

2 – In the food processor grind walnuts to a medium fine texture.
3 – Add dates, cinnamon and 2 t honey (or agave nectar). Process until crumbly.
4 – Add crumb mixture to bowl on top of peach filling.

Serve immediately and enjoy!!!


I’ve decided to post these recipes in groups.  Here are the blueberry recipes.


1-1/2 C nuts and/or seeds (walnuts, almonds, sunflower seeds, and/or pecans), soaked for 6 – 8 hrs.
1-1/2 C dried fruit (raisins, dates, etc.)
9-10 oz. blueberries
Sliced bananas (optional)

*Drain soaked nuts/seeds.
*Process nuts/seeds with dried fruit in a food processor with the S blade, until very fine. Process until the mixture forms a ball of dough.
*Press the dough into a pie plate.
*Process berries in the food processor until smooth.
*Taste. If the berry blend does not seem sweet enough, add a few raisins or dates (but not too many, as the crust is quite sweet on its own. The larger part of the berry mixture must be blueberries, in order for the pie filling to gel well.
*Pour filling into pie shell. Chill until firm.

OPTIONAL: layer the bottom with sliced bananas.

NOTE:: Do: do not use frozen berries– they will not gel.


1 pt blueberries
2/3 C banana
1-1/2 C dates, pitted and soaked
2 C walnuts, soaked 4-6 hrs.
1 T agave nectar (or honey
pinch sea salt
little coconut oil

1. In a food processor, process 1/2 C dates, walnuts, agave nectar (or honey), and sea salt until fine.
2. Use coconut oil to grease cup cake holder
3. Pat crust mixture into cup cake holders

1. Process remaining dates, banana, and 1/2 pt blueberries in a food processor until smooth.

2. In a bowl, combine blueberry/date/banana mix with whole blueberries.
3. Divide blueberry mix into individual crusts.
4- Chill for 2 hrs.
5. Carefully remove tarts from cupcake holder.


Quick, easy, delicious, and refreshing 3-ingredient dessert
1 pt blueberries
2 bananas
juice of 1/2 lemon

In a blender, puree blueberries, bananas, and lemon juice.
Remove to a bowl and chill until jelled.
