9/19/13 : WHAT WAS IN THE BOX , WHAT I WENT HOME WITH, and what I will do with it

This is what we got and what I ended up taking home:

Celery root – 2 pcs
Baby bok choi – 1 bun
Scallions – 1 bun……………traded for bok choi
Arugula – ½ lb bag…………traded for 3 red peppers
Zucchini – 1 pc………………got 2 med.small eggplants
Long Red Peppers – 3 pcs
Sweet Potatoes – 1.75 lbs

It was hard for me to decide to take home the eggplant but there was really nothing else to choose except 3 small sweet potatoes, so I bit the bullet.  Now, after researching for only a short time, I wish I had traded something for the eggplants there for trade, as I have found several tasty-looking recipes for fermented eggplant. I am looking forward to making some hot ajvar with the eggplant and red peppers, and some fermented eggplant with garlic.

I’M GIVING UP ON EGGPLANT

It’s been eggplant season, apparently.  I dutifully collected eggplants and took them home to try new recipes supposed to make me like eggplant.  With only one more recipe to go (a bacon-like recipe), I have pretty much decided that eggplant is not for me.  No problem. I never cooked eggplant, either.  There is really no point to trying to like it raw if I did not like it cooked.  Now all I have to do is find a taker for any more eggplants I get in my box.

8/27/08 CSA SHARE: What I Got

I’ve been having an unusual summer, so I haven’t been posting as much as I think I should.

Anyway, here is what I got

RED TOMATOES…………………….4+ lbs! (About 4 tomatoes)
Plus, the woman who was emptying her box next to me just asked me if
I wanted her tomatoes, so that was 4 more, and then I found 3 in
the trade box
CHERRY TOMATOES …………….1 pint
CARROTS……………………………1 bunch
GREEN CRISP LETTUCE………….1 head
BOSTON RED LETTUCE………….1 head
EGGPLANT………………………….2 pieces
LONG GREEN PEPPERS ………….4 pieces
SUNJEWEL MELON – I traded this for a watermelon
BABY WATERMELON…………….1 piece
ZUCCHINI………………………….2 pieces
YELLOW SQUASH………………..2 pieces

Yum! I love tomatoes!!!!!

I should get around to posting some recipes…. I know the lettuce will go into smoothies with the tomatoes.

08/21/08 CSA SHARE: What they say we will get

This is what they say we will get:

My recipes will be for eggplant…  I have checked with the farmers – the green peppers *are* ripe — they never get red.  The potatoes go next door to my elderly neighbor lady who likes hash browns.

I think we will get peaches in the fruit share… they never tell us Thursday people what it will be, but, often, it is the same as what the Tuesday and Wednesday shares get, so… I am guessing

EGGPLANT LASAGNA

EGGPLANT LASAGNA
adapted from a recipe at http://www.thevegetariansite.com

FOR LASAGNA LAYERS:
1 med eggplant
2 C water
1/4 C nama shoyu, or tamari sauce
1 t sea salt
2 C zucchini, grated
1/4 red onion, thinly sliced

TOMATO SAUCE:
2 lg tomatoes
italian seasoning to taste
1/2 t garlic (or to taste, optional)
2 T minced onion (or to taste, optional)

CHEEZE
1 C pine nuts
1/2 C sunflower seeds
1/2.Csunflower seeds
1/2 T sea salt (or to taste)
1/4 C fresh basil (or 1 T dried)
2 cloves garlic
1/2 C water

Thoroughly mix water, nama shoyu (or tamari) and sea salt for eggplant marinade.
Thinly slice eggplant lengthwise.
Marinate eggplant in marinade for 2 – 12 hrs.
Remove eggplant from marinade and lay on paper towels to dry.

TOMATO SAUCE
Combine all ingredients in a food processor or blender.

CHEEZE:
Blend all ingredients in a blender.

TO ASSEMBLE:
In a baking dish, alternate layers beginning with eggplant, then tomato sauce, then shredded zucchini, then cheeze.

Finish with grated zucchini.  Garnish with thinly slice onion.
