BLUEBERRY RECIPES

I’ve decided to post these recipes in groups.  Here are the blueberry recipes.

RAW BLUEBERRY PIE

1-1/2 C nuts and/or seeds (walnuts, almonds, sunflower seeds, and/or pecans), soaked for 6 – 8 hrs.
1-1/2 C dried fruit (raisins, dates, etc.)
9-10 oz. blueberries
Sliced bananas (optional)

*Drain soaked nuts/seeds.
*Process nuts/seeds with dried fruit in a food processor with the S blade, until very fine. Process until the mixture forms a ball of dough.
*Press the dough into a pie plate.
*Process berries in the food processor until smooth.
*Taste. If the berry blend does not seem sweet enough, add a few raisins or dates (but not too many, as the crust is quite sweet on its own. The larger part of the berry mixture must be blueberries, in order for the pie filling to gel well.
*Pour filling into pie shell. Chill until firm.

OPTIONAL: layer the bottom with sliced bananas.

NOTE:: Do: do not use frozen berries– they will not gel.

BLUEBERRY FRUIT TART

1 pt blueberries
2/3 C banana
1-1/2 C dates, pitted and soaked
2 C walnuts, soaked 4-6 hrs.
1 T agave nectar (or honey
pinch sea salt
little coconut oil

Crust
1. In a food processor, process 1/2 C dates, walnuts, agave nectar (or honey), and sea salt until fine.
2. Use coconut oil to grease cup cake holder
3. Pat crust mixture into cup cake holders

FILLING
1. Process remaining dates, banana, and 1/2 pt blueberries in a food processor until smooth.

2. In a bowl, combine blueberry/date/banana mix with whole blueberries.
3. Divide blueberry mix into individual crusts.
4- Chill for 2 hrs.
5. Carefully remove tarts from cupcake holder.


BLUEBERRY JELLO

Quick, easy, delicious, and refreshing 3-ingredient dessert
1 pt blueberries
2 bananas
juice of 1/2 lemon

In a blender, puree blueberries, bananas, and lemon juice.
Remove to a bowl and chill until jelled.

7/17/08 SHARE: Where will it all go???

They said I would get the items listed. The ones I got are colored.

CIPPOLINO ONIONS – 1 bunch
CARROTS | Qty: 1 bunch
apparently, in the end, boxes had either carrots or golden beets.
BEETS | Qty: 1 bunch

I got two bunches of beets: golden and regular, both with nice greens
CABBAGE | Qty: 1 head

this is a cute little head, about 5 inches in diameter.
BASIL | Qty: 1 bunch
GARLIC | Qty: 2 heads
ZUCCHINI — I got about 5 zucchini
CUCUMBERS — I got about 4 small but healthy looking cucumbers

HAPPY NOTE: I found where they were craftily hiding the discard/exchange bin, and, rummaging through it, I scored 2 bunches of carrots, 2 heads of garlic, 1 cabbage, and 1 bunch of basil, a radicchio, and another bunch of onions.

Oh! THE FRUIT SHARE!!!!!

I got a big bag of peaches and a pint of blueberries!

Where is all this going? Duh! the refrigerator!!! Seriously… i have recipes! Do I ever have recipes! I am prepared. Stay tuned for my next post, wherein I will divulge all!!!!

I loved the round zucchini I got last week!  Of course, I spiralize any zucchini in sight — the round one was easier because I did not have to cut it into pieces, and I did not lose as much as I would with a long zucchini. Plus, it’s just cute.

The raspberries will go into a smoothie, probably tomorrow morning.

Blueberries are so curious — they gel up right away — I may make a dessert with them for my roommate.??? Blueberry pie???? Probably not… maybe just gelled up blueberries, as a “pudding”.

The beets had lovely greens – I will probably make up some massaged greens tomorrow night, for my weekend lunches.  I’ll juice these beets, just because I still have some left from last week, so I have plenty for my famous ground beet salad.

lettuce lettuce and more lettuce… and chard.  My room-mate has come up with a salad dressing that wilts anything in sight — I must study that and learn to make something that works like that.

Yum!!! Cucumbers!  I will need to score some tomatoes, to make my easy cucumber tomato salad — thinly sliced, sprinkle with pepper, soak in apple cider vinegar — just like Grandmom used to make.

This parsley doesn’t look like parsley to me — it has big leaves. I ate one as I bagged the bunch, just to find out what it was… tastes like parsley.  I told my room-mate she could use some of it, and she thought it was a leaf for salads — hey!!! it wasn’t half bad as  1/3 of a lettuce mix with tomatoes (I gave her a bag of the lettuce mix I got last week)


7/3/08 CSA SHARE: what I got

Been down so long it looks like up to me!
No, I am not depressed – I just tried to download Windows Media, only I only have Windows 98SE, so my system crashed.  I fretted.  Who has money in my family of me(i.e., me, me, or me) to pay for computer repairs?  Then a nice Facebook friend suggested a fix and… after a lot more fretting… it worked!!!!  Yippeee!!!! (I love you Jose!!!!)

So, anyway, this is what they promised, and this is what I got:

I got some collards, too.  They went immediately into massaged collard salad.

Whoops! I thought the cucumbers were zucchini!  (Just too used to zucchini, I guess)

The zucchini go to the spiralizer for “pasta”

The dill went into the dehydrator, because I do not trust myself to use the fresh quickly enough.

Carrot juice.
Beet juice.

My favorite beet salad (food process the beets into a fine grate. Add olive oil, finely chopped fresh garlic, apple cider vinegar, mix all)

Green smoothies with the lettuce and turnips, turnip greens and beet greens, plus some tomatoes, and maybe some fruit.
