SOUTHERN-STYLE AMBROSIA
I have seen all sorts of recipes called “ambrosia, but I have never seen a recipe like the one my grandmother taught me. This is what I make.

4-6 oranges, peeled and chopped
1  C dried unsweetened coconut
1/4  C coconut/palm sugar (or to taste)*

Toss everything in a large bowl.  Let sit in the refrigerator for 1 hr to overnight.
Eat

NOTE: My grandmother used sweetened coconut and sugar. I don’t do *sugar* sugar, but I have been experimenting with coconut/palm sugar lately. I put 1/4 C of this sugar in my recipe, but you might want more. You put the sugar in, toss well, and then you put it in the refrigerator, and let it develop.

I have seen recipes from other parts of the country, where they use all sorts of ingredients. I suppose you could create a “fruit salad” by adding in other fruit.

* you could also use finely chopped dates, or some other sweetener, like agave syrup, or stevia, if that’s what you want to do
