BLUEBERRY RECIPES: a smoothie & candy!

blueberries and cashew smoothie


1/4 C cashews, soaked for 2 hrs
4 C water
1 banana
3-4 dates, pitted
1/2 t bourbon vanilla (or other vanilla flavoring)
1/2 t green powder (wheatgrass, spirulina, or other superfood)
1 pt blueberries

Place cashews and water in a high speed blender and process until smooth.
Add remaining ingredients and process until well blended.

Drink as is, or pour into popsicle-makers, freeze, and enjoy a raw popsicle.


1 C coconut flakes
1 C dates
1 t vanilla powder
1/4 t sea salt
1/2 C blueberries
2 T tahini

In a food processor, combine coconut flakes, dates, and sea salt, process to a fine consistency.

Add blueberries,  and  tahini and vanilla powder.  Process until smooth.

Take walnut-sized balls of mix, and roll between the palms of your hands and roll .

Refrigerate for 3-5 days.
