THE ZUCCHINI BREAD:it’s good for what it is

When I tried the zucchini bread, I found it more crumbly than I would like (remember home-made whole wheat bread?) I felt I needed a fork to eat my sandwich.  It was very nice under spreads and pates, i.e., in my life, it would work well as an appetizer, or an open face sandwich.

I still like my sunflower/flax seed bread best for sandwiches you can hold.
