A few weeks ago, I made a batch of sauerkraut, and, when I went to put a jar in the refrigerator, I decided to add more water, to keep the sauerkraut covered. A few days later, I went back to the jar and found that the sauerkraut had virtually no flavor. I figured I had ruined it, but, since I did not feel like going to the trouble of throwing it out and washing the jar, I put it back in the refrigerator, and tried not to think about it.
Last night, while I was cleaning out the refrigerator, I looked at the jar and decided it was time. I took it out and set it on the counter. When I finally got around to being ready to deal with the jar and its contents, I decided to taste it one more time. Surprisingly, I found that the sauerkraut had gained a flavor, and actually tasted rather like the kind of sauerkraut you get from a store. So, I can save this batch, after all.
Although I have become quite partial to the sweet flavor of my usual 3-4 day batches of sauerkraut, I can mix this sauerkraut into everything that needs a vegetable or a thickener. Soup tonight. Crackers tomorrow. Bread on the docket for “soon”.
