Someone recently asked about what to do with sauerkraut. We go through a lot of sauerkraut in my two-person household. Here are some of the things we do with it
*Add it to soup(I really like it in butternut squash soup, or broccoli soup (2 C chopped squash or broccoli, 1 C soaked/drained cashews, 2 T Thai green curry paste, 1 T extra virgin olive oil, 1/2 C sauerkraut, 1-2 C spring water, to make a soup. Process in a high speed blender until warm)
*Add it to a cashew or almond cheeze (I recently mixed it in with a “faux chicken pate made from 2 C almonds, soaked and drained; 1 C sunflower seeds soaked and 1 C, 1 C water, 1/2 t salt, optional:1 t turmeric, process in food processor until smooth..I sometimes add some garlic and extra virgin olive oil)
* Add to raw beet salad (my recipe: http://prettysmartrawfoodideas.wordpress.com/2009/06/06/beet-recipes-for-the-raw-in-you/)
* I am going to add it to my next batch of raw dehydrated sunflower seed crackers.
Truthfully, I love this stuff so much I eat it straight from a bowl (I would eat it straight from the jar, but I want to be a little more civilized). I am hard-pressed to think of a food I could not add it to.
I haven’t found a way to use it that did not work for me yet.
